The “Paerno” Amarone is produced using the traditional appassimento method, where carefully selected grapes are dried for three months before fermentation. This process concentrates the sugars and flavors, resulting in a rich and complex wine. The wine is then aged for 30 months in large oak barrels, enhancing its depth and character.

Vinícola Vaona is a family-owned winery situated in the heart of the Valpolicella Classica region, specifically in the Marano municipality of Veneto, Italy. The Vaona family has a long-standing tradition of producing Valpolicella wines, preserving the region’s rich heritage and winemaking practices. The estate includes a recently renovated cellar, part of a complex dating back to the mid-17th century, reflecting the family’s deep-rooted history in the area.

The winery manages approximately 10 hectares of vineyards, characterized by excellent sun exposure, primarily located on hillsides at an average altitude of about 200 meters above sea level. These fertile soils are ideal for cultivating indigenous grape varieties such as Corvina, Corvinone, Rondinella, and Molinara, which are essential for producing the renowned Amarone and Recioto della Valpolicella wines.

In the early 2000s, the Vaona family transitioned from bulk wine production to crafting high-quality, terroir-driven reds. They are committed to organic farming practices, ensuring that all vineyard activities, including pruning, defoliation, thinning, and harvesting, are performed manually. Winemaker Alberto Vaona employs indigenous yeasts and minimal sulfites, adhering to traditional regional winemaking methods.

The winery’s portfolio includes a range of Valpolicella wines, each showcasing the unique characteristics of the region. The Valpolicella Classico is a light and bright expression, while the Valpolicella Superiore Ripasso “Pegrandi” and Amarone della Valpolicella wines offer more concentrated flavors, achieved through the traditional appassimento method of drying grapes for about three months. This meticulous process results in wines with rich, complex profiles that are highly regarded by wine enthusiasts.
